Torta de mandole - Torta di mandrole - Almond cake
INGREDIENTS:
- 300 g almonds
- 300 g sugar
- 8 eggs
PREPARATION:
Separate the egg yolks from the whites. In one bowl, beat the egg whites until stiff peaks form.
In another bowl, whisk the yolks with the sugar until pale and fluffy.
Gradually fold the finely ground almonds and the beaten egg whites into the yolk mixture, mixing gently from bottom to top with slow motions to avoid lumps and keep the batter light.
Grease a cake pan with butter and lightly dust it with flour, shaking out the excess.
Place the pan in a cold oven and bake at 180 °C (350 °F) for about 40 minutes.
Allow the cake to cool completely, then sprinkle with powdered sugar and chopped almonds before serving.
