Rafioi - Dolcetti - Filled sweet dumplings
INGREDIENTS:
- 500 g flour
- 100 g butter
- 2 or 3 eggs
- 100 g sugar
- Jam for filling
- Oil (for frying)
PREPARATION:
On a work surface, arrange the flour in a volcano shape.
Place the eggs, butter, and sugar in the center.
Knead the dough vigorously until it becomes smooth and homogeneous.
Roll out the dough with a rolling pin into a thin sheet.
Cut it into rectangles, place a little jam in the center of each piece, fold to seal, and fry in hot oil until golden.
